How is Purity Coffee processed?Updated 8 months ago

Ease, Flow, Balance and Calm are washed coffees. With this process, the coffee cherry is ran through a pulper that removes the majority of the skin off the fruit. It is then moved to a controlled fermentation tank that has  wild yeast and bacteria. Similar to the good bacteria found in yogurt, the purpose is to remove any remaining skin and fruit from the coffee cherry. The resulting green coffee beans are then washed with fresh/clean water, and dried by patio or in a drum dryer.

Protect is honey processed. Honey process is a method in which coffee cherries are picked and sorted, have their skins and pulps removed like other types of coffee—but are then dried without washing off the sticky-sweet outer layer of the fruit (the pulp). There can be some natural fermentation occurring under the skin of the fruit, but no yeast is intentionally added. Honey processing gives the coffee a sweeter flavor and high drinkability, but there is not actual honey added.
